Why in nixpkg in version 25.11 we are in incus 7.0.0 while in unstable we are in 6.23. Shouldn’t it be the other way around? Thank you

In general the Incus project doesn’t do packaging so we don’t control what version each distro includes in their repository.
It looks like search.nixos.org is out of date, if you’re using that as your reference. The unstable channel moved forward yesterday after a delay, but there was indeed a window where 25.11 had 7.0 before unstable.
As of today we offer:
25.11: LTS on 6.0.6, latest on 7.0
Unstable: LTS on 7.0, latest on 7.0
