Lxd snap stuck in 4.0/stable/ubuntu-20.04

Ubuntu 20.04 is an LTS release and so by default it uses the LXD LTS (4.0) release as well.

You can switch channels using:

sudo snap refresh lxd --channel=latest/stable

However keep in mind that you will not be able to switch back to the LTS 4.0 channel due to schema changes.
